Legally speaking, Jain and Hindu get registered under the same Hindu Marriage Act, so there is no issue there.
The “Shudhikaran process” is symbolic and not legally enforced. It does not mean you are no more a Jain any more. May be it means you are a Shudh Jain now!

If you marry by Church, they will want you to convert and ask children by this marriage be raised only as a Christian. Is that okay with you?
If you marry by the Arya Samaj and Hindu Marriage Act, she will have to convert to Hinduism. Any Arya samaj will help you on this matter.
The best option is the Special Marriage Act 1954 but that takes time.

Can you give us more details about your love? You may go to an Arya Samaj and convert her but there will be lots of resistance and issues all your life. Instead, can you marry by the Special Marriage Act 1954 and let her decide her faith over time? Lets talk more.

Unexpectedly Allah’s Apostle came to me in the forenoon and my mother handed me over to him, and at that time I was a girl of nine years of age.”

My wife Shenaz Diwakar did not change her religion but takes part in Hindu rituals equally.
